Well two great tools for today's healthy kitchen, let's start by telling you what each machine does. A blender is a standard piece of kitchen mixing equipment, for the raw foodist this is what you use to make delicious meal-in-a-glass smoothies!

A blender is simply a mixing jug with a rotary blade at the bottom; whatever you put in the top gets liquidized and turned into a drink! So for example you may throw in a banana, some soy milk, some strawberries and a few ice cubes and you'll have a delicious and easy to digest fruit smoothie, no waste, and no fuss and just swill out the blender jug when you are done. Simple!

Growing Your Own Herbs

1 I do quite a bit of cooking, not only because home cooked meals are cheaper than eating out every day, but also for the health benefits and because in a lot of cases what I make simply tastes better.

It's only been in the past few months or so that I've started using fresh herbs in my cooking, and I have to say, it's made a real difference to the taste of my cooking, and all in a good way!

I've also become more generous in my use of spices and I started to wonder what exactly is the difference between herbs and spices? Generally speaking, herbs are the leaves of low growing plants such as rosemary, thyme or basil. Spices come from the roots, bark, fruit or berries of plants, such as cinnamon, ginger, nutmeg and pepper.

Now I've always had an issue with the way herbs are sold in supermarkets. Most recipes call for maybe a tablespoon at most, yet I was paying up to two dollars for a bunch of basil, more than half of which would end up in the composting pile. So I decided to grow my own.

There are a couple of different ways that you can go about this. You can use soil, or you can go hydroponic.

The soil based method is really pretty basic. You buy soil, pots and seeds. Put the soil in the pots, plant the seeds, place in a warm sunny spot, keep moist and in about eight to ten weeks you should be harvesting your own home grown fresh herbs.

It can be a bit time intensive because you need to ensure that your herb plants get enough water and nutrients, so if you're not home all that much, this might not be the way to go. You also need sufficient light, so a south facing window is best.

I have two indoor cats who simply will not stay out of planters, no matter how much I chastise them, so growing herbs in pots was simply not an option for me.

An alternative is hydroponics, or a variation thereof. When I first started researching this, I was overwhelmed with the amount of material I found, and quite frankly, the expense in purchasing all the stuff I'd need simply wasn't worth it.

Fortunately, there are household units available through a variety of retailers and online stores that are specifically created so you can grow your own herbs, salad greens, and even tomatoes and peppers at home.

Most units come in a variety of sizes, so buy one that makes sense for you and your family. I've found mine super easy to use and it's been great fun watching my herbs sprout to harvesting size in just four weeks.

The only downside is that most of the units use proprietary materials, so that you have to buy seed kits from them again and again and that cost can add up.

The advantages are that most include a light source, so you can place them anywhere in your house that has a electrical outlet handy, and the nutrients come prepackaged so you don't have to worry about getting the concentrations right.

I've even joined an online forum specifically catering to people who use these gadgets, and I have to tell you, they're addictive!

The Incredible Edible Wheat Berry

Twenty years ago if someone were to talk to me about wheat berries I wouldn’t have the foggiest idea as to what they were talking about. My lack of knowledge about health kept me in the dark about the difference between white wheat products and whole wheat products in the early years of my life and I paid the consequences with a toxic system later on down the road. Thank goodness I started doing my own research about the importance of whole grains for optimal health. Besides that I discovered that the wheat berry is not the cousin of the blueberry bush.

Fast forward twenty years. Knowledge is good. Wheat berries are little kernels of grain that are ground down into making whole wheat flour. Whole wheat flour can be used for making the same flour products that come from white enriched all purpose flour. The difference? Your health. Whole wheat is naturally grown and enriched with important vitamins and minerals that our body needs to stay healthy. These important nutrients have all been taken away from all purpose white flours and can be found in bags labeled wheat germ and bran in your health food stores.

The incredible, edible wheat berry is where all flour originates. Whole wheat flours contain three important parts of the wheat kernel, which are bran, endosperm, and germ. The bran is the hard, brownish outer protective skin of the grain berry and consists of 7 layers; these layers are a concentrated source of dietary fiber, which is absolutely necessary for a healthy system. The endosperm is the inner part of the grain and consists of the protein part of the kernel. The germ contains the plant embryo where most of the vitamin E content is stored. Whole wheat flour is a complete food.

White enriched all purpose flour does not have any nutrients left in it – it is an incomplete food. This is why they label it “enriched”. They add a few trace vitamins back into the flour so they can call it enriched but it cannot compare to the benefits of whole wheat flours. Take away the bran, the germ, and the endosperm and what do you have left? A powdery white substance that has no nutritional value whatsoever. White wheat products have no flavor, they are light but fattening, fluffy but not very filling, and they almost always stick to the roof of your mouth. The really awful part about white wheat products to the diet is they back up the intestinal tract causing numerous health problems in the long run.

The wheat berry is an incredible kernel filled with life giving nutrients, and the neat thing about it you can eat it just the way it is without grinding it into flour. You can soak the wheat berries in hot water and a little sea salt and give yourself a fibrous, nutritious meal anytime throughout the day. You can add some honey or molasses, and you’ll be good to go for several hours.

A Little Easy Tips on Cooking With Rice

Rice is a very versatile food which can be a meal in itself, can be eaten cold as a salad, hot as a pudding or it can be served as a meal accompaniment. Use online recipes to get the most out of your packet of rice and experiment with different races – long grain, short grain, Arborio or risotto rice, pudding rice, brown rice, wild rice and basmati rice.

Here are 4 ways to use rice: -

1. Boiling rice – Rice is a great accompaniment to curry, chili, casseroles, meat in sauces etc. and can also be used to make rice salads. You can purchase rice cookers or microwave rice steamers which are worth buying if you make a lot of rice.

To boil rice in a pan, first measure out rice and water. A mogul of rice will easily feed two people as a main course accompaniment and you will need twice as much water as rice, two moguls of boiling water. Either boils the water in a pan or uses a kettle and then pours the water into a medium sized pan. Once the water is boiling, add the rice and a little salt.

Bring back to the boil and then turn down to a simmer, place a lid on and leave to cook for about 15 minutes. If there is still liquid left after cooking, simmer for a bit longer, until it has been absorbed and serve. Some people like to place their cooked rice into a sieve and pour boiling water over it to rinse it, but this is not necessary.

2. Fried rice – Fried rice can be eaten by itself or as an accompaniment to Chinese dishes. It is a great way of using up leftover rice.

Boil the rice in the usual way and then let it cool. Beat 2 eggs together in a bowl and season. Heat some oil in a large frying pan or wok over a high heat and add the eggs when the oil is hot. Stir constantly until the eggs are softly scrambled. Add rice and some soy sauce or oyster sauce. Cook until the rice is hot and everything is combined.
For variety, you can fry chopped onion in the pan before adding the eggs and you can also add cooked chicken or cooked, peeled prawns when you add the rice.

3. Risotto – Making a risotto is easy but it does need your constant attention. Look for risotto rice or Arborio rice in your supermarket.

Sauté chopped onion in a large, deep frying pan and then add uncooked rice with some mushrooms. Coat the rice in the hot oil and then start adding liquid such as stock or white wine or a mixture of both. Add the liquid a little (a ladle full) at a time and add more when the liquid has been absorbed by the rice. Stir regularly to stop the rice sticking. Once the rice is cooked and creamy (to your taste) add a knob of butter, some grated parmesan cheese and serve. For variety, you could also add cooked chicken, sausage or prawns, frozen peas or sweet corn – experiment.

4. Rice Salad – Making a rice salad is a good way of using left over boiled rice and is a great dish to serve at BBQs or to take on a picnic. You need to either boil some rice or then let it cool, or use leftover rice. Eat a Variety of Veggies for a Healthier You

The new food guidelines issued by the United States government recommend that all Americans eat between five and nine servings of fruits and vegetables each and every day. When you first hear that number, it may seem like a lot, but it is actually much easier than you think to fit that many servings of fruits and vegetables into your daily diet.

Many people mistakenly think that they do not need to eat five to nine servings of fruits and vegetables every day if they just take a vitamin supplement. Actually, nothing could be further from the truth. That is because fruits and vegetables contain far more than the micronutrients identified by science and synthesized in vitamin pills. While these micronutrients, such as vitamin C, vitamin A and vitamin E are important to good health, so too are the hundreds of other elements that are contained in healthy foods like fruits and vegetables. These elements are not available in any pill; they must be ingested through a healthy, balanced diet that contains plenty of fruits and vegetables.

In addition, fruits and vegetables are much less costly than vitamin pills. Fruits and vegetables are very inexpensive, especially when purchased in season and grown locally. In the long run, getting the nutrition you need from the food you eat is much less expensive, and much better for you, than popping those vitamin pills every day.

So don't forget to get your five to nine servings of fruits and vegetables every day. It may seem like a lot, but you can meet this quite reasonable goal simply by including fruits and vegetables as snacks, as garnishes, as side dishes and as meals.
